Zucchini Pancakes

These are Ina Garten's zucchini pancakes, and they are just delicious. We ate them for dinner a while ago and they were moist AND crispy. The batter got rather wet from the zucchini as they sat, so I would recommend microwaving the bowl of shredded zucchini before adding the flour and other ingredients in. That way you can get nice crispy zucchini pancakes. Because the batter gets wetter over time, you have to add a little flour to make it the right consistency. The picture of the two pancakes side by side show the difference between the original pancakes and the needed-to-add-more-flour pancakes. One is more zucchini-fied and the other is more like a traditional pancake.
