This Confetti Life, Cinco de Mayo is celebrated nationally in the US but only regionally in Mexico. Today is also the second day of having no classes and in order to properly celebrate, I decided to make lemon bars from scratch! I found this awesome website, bakerella.com, thanks to my friend Brandy. Anyway, these lemon bars are delicious and easy and quick. I ate one warm so it was all gooey (and amazing) but now they are cooling in the fridge, getting ready for a pre- and post-dinner snack.
