Tourtes aux lentilles

This is a French dish I made out of a cookbook a friend and I got at FNAC in Pau. It's got lentils, eggplant, zucchini, and bell pepper among other things, and on top mashed potatoes and green onions. It was delicious and very light-tasting and SO healthy. No butter and very little oil was used, full of protein, fiber, and taste. And it makes so much, too much. TOOO MUCH.
