Lemony Pasta

 This recipe is one I came up with myself. I took a lemon pasta and broccoli dish I got from Ina Garten and re-arranged it to have a slightly different flavor and more veggies. 

 

Ingredients

2 tbs olive oil

1 tbs margarine or butter

2 C cooked orzo pasta (al dente, make sure to salt the water) 

1/2 C cut fresh green beans, 1 inch pieces 

1/2 C green bell pepper

1/4 cup chopped onion

1 C sliced mushrooms (button, baby Bella, etc)

1-2 tbs minced garlic (depending on your taste)

1/8 tsp cayenne

1/8 tsp paprika

1/4 tsp black pepper

1/8 tsp garlic powder

1/8 tsp ground ginger

1/8 tsp salt

1-2 tbs lemon juice 

 

25 minutes, serves 2-3 people

 

Heat olive oil in large sauce pan on medium heat. Add green beans and cook for five minutes until slightly tender. Chop other vegetables while waiting. After five minutes, add the green bell pepper , mushrooms and margarine, cook for 3-5 minutes until the green color is brighter. Then add the garlic, onion and spices. Cook for around 5 minutes until onions are translucent, add lemon juice and pasta. Cook for 5 more minutes until lemon juice begins to reduce, remove from heat and let sit 5-10 minutes to cool and meld flavors before serving.
